Melt the butter and set it aside to cool slightly.
In a large mixing bowl, whisk together the melted butter, brown sugar, granulated sugar, egg, and vanilla extract for 3–4 minutes, until well combined and the sugar is mostly dissolved.
Add in the flour, baking soda, and salt. Stir until a smooth dough forms.
Fold in the white chocolate chips and chopped pistachios.
Line a baking sheet with parchment paper. Portion out 6 oz (170g) of cookie dough per cookie.
Freeze the dough balls for 1 hour.
Preheat oven to 425°F (218°C).
Bake the cookies for 10–12 minutes, or until the tops are golden brown.
Let cool before serving. Makes about 9 large cookies.
