White Chocolate Chip Peppermint Cookies

Start by browning the butter. In a small pan, over medium heat, Let the butter melt and simmer, while constantly stirring, until it was an amber brown. Then in a large bowl, Add in the brown butter, brown sugar, egg, and vanilla extract. Whisk this for about 3-4 minutes, until the sugar was dissolved. Then Add in the flour, baking soda, and salt and combined well with the wet ingredients.
Once the cookie dough came together, Roughly chop 6-7 soft mints. Add the peppermints and white chocolate chips into the cookie dough and folded it in. On a parchment lined pan, Portion each cookie by 6 ounces and froze the dough for 1 hour. While the cookie dough was in the freezer, Preheat the oven to 425 F (218C).
Once the cookie dough was frozen, Bake it for 9-11 minutes, or until the top was golden brown.
This recipe made me 10 cookies.
