White Chocolate Chip Cherry Cookies

Preheat the oven to 350°F (177°C) Pit and chop the cherries into small pieces. Melt the butter in the microwave for 30 seconds. In a large bowl, add in the butter, sugar, egg and vanilla extract and whisk these ingredients together for 3-4 minutes.
Then, add in the flour, baking soda, baking powder, salt, chopped cherries and white chocolate chips. Gently stir this together until the ingredients are well combined. Using a cookie scoop, Portion the dough about 2 tablespoons per cookie and placed them on a parchment lined baking sheet.
Bake the cookies for 11-13 minutes until the edges are golden brown.
