Ingredients

Salted butter½ cup (113 grams)
Brown sugar¾ cup (150 grams)
Egg1 (50 grams)
Vanilla extract1 teaspoon (4 grams)

Glaze

Powdered sugar½ cup (60 grams)
Lemon juice1–2 tablespoons (15–30 grams)

Instructions

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Melt the butter in the microwave for 45 seconds. Dice the strawberries.

In a large bowl, add in the butter, sugar, egg and vanilla extract and whisk these ingredients together for 3-4 minutes until the batter is light and fluffy.

Add in the flour, baking soda, baking powder, and diced strawberries. Gently stir this together until the ingredients are well combined. Let the cookie dough chill in the freezer for 30 minutes.

Using a cookie scoop, Portion the dough about 1.5 tablespoons per cookie and placed them on a parchment lined baking sheet.

Bake the cookies for 11-13 minutes until the edges are golden brown.
