Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Freeze the marshmallows for about an hour before using.
In a large bowl, whisk together the melted butter, brown sugar, egg, and vanilla extract for about 2 minutes. Fold in the flour, baking soda, oats, and salt until just combined.
Crush graham crackers directly into the batter and add in the chocolate chips and frozen marshmallows. Gently fold these ingredients in, saving a few to press on top of each dough ball.
Scoop dough into 2-tablespoon balls. Place 2 inches apart on your baking sheet. Press a few extra chocolate chips and marshmallows on top.
Bake for 9–11 minutes, or until the edges are golden brown. Then, let them cool on the tray for 10 minutes before transferring to a cooling rack to fully cool down.
