S'mores Brownies

To start, Add the graham crackers into a bowl and smashed them until they were all crumbs. If you have a food processor, I’d recommend using that instead of manually crushing them . Then Melt the butter and mixed it well with the crust. In a parchment lined 8x8 baking pan, Press the crust into the bottom of the pan.
Before moving on to the brownie batter, Preheat my oven to 350°F (175°C). Then, Melt the butter in the microwave for 1 minute, making sure it was fully melted and also hot. Add this to a large bowl, along with the olive oil, brown sugar, and vanilla extract.
Whisk this together for 3-4 minutes, until the brown sugar was fully dissolved. Then Add in the eggs and mixed this in for another minute. Once it was well combined, Add in the dry ingredients: flour, cocoa powder, and salt. Mix this together for another minute. Once the batter was well combined, Pour it over the graham cracker crust in my baking pan.
Bake this at 350°F (175°C) for 18-20 minutes. Towards the end of the baking time, Take the brownies out of the oven and sprinkled my marshmallows and chopped chocolate on top. Put this back in the oven for another 2-5 minutes to let the marshmallow melt and slightly brown. I had to watch this closely as I’ve easily burned the marshmallows before, so Recommended checking on it every minute .
Once the marshmallows are golden brown, Take them out and let them cool for 15 minutes before cutting the brownies into 9 even-ish squares.
