Preheat the oven to 350°F (177°C) Peel and dice a cup of apples. This was one large apple . Melt the butter in the microwave for 30 seconds. In a large bowl, add in the butter, sugar, egg and vanilla extract and whisk these ingredients together for 3-4 minutes until the batter is light and fluffy

Then, add in the flour, baking soda, baking powder, salt, diced apples and salted caramel chips. Gently stir this together until the ingredients are well combined. Using a cookie scoop, Portion the dough about 2 tablespoons per cookie and placed them on a parchment lined baking sheet.

Bake the cookies for 11-13 minutes until the edges are golden brown.
