Pumpkin Spice Cupcakes
by JosephineRich chocolate-pumpkin cupcakes with pumpkin puree baked into a cocoa batter, finished with a chocolate chip frosting. An easy fall cupcake recipe with.
In one bowl, cream together the butter, sugar, and egg until light and fluffy.
Split the batter into two bowls. In one half, mix in the cocoa powder and chocolate chips. In the other half, mix in the pumpkin purée and pumpkin spice seasoning.
Chill both doughs for at least 30 minutes. The chocolate base may firm up more than the pumpkin base—that's okay!
Take a scoop of each dough and gently press and roll them together to form a marbled or swirled cookie dough ball.
Place onto a parchment-lined baking sheet and bake at 350°F (175°C) for 12–15 minutes, or until the edges are set and the centers look slightly underdone.
Let cool on the tray for 5 minutes before transferring to a wire rack.
