Melt the butter and set aside to slightly cool. In a large mixing bowl, combine the melted butter, brown sugar, egg, and vanilla extract. Whisk for 3–4 minutes until the mixture is lighter in color and the sugar is mostly dissolved. Add the flour, baking soda, and salt to the bowl. Mix until a smooth dough forms.

Fold in the dark chocolate chips and chopped pistachios. Line a baking pan with parchment paper and portion out 6 oz (170g) of dough per cookie. Freeze the cookie dough balls for 1 hour.

Preheat the oven to 425°F (218°C).

Bake the cookies for 10–12 minutes or until the tops are golden brown.

Let cool slightly before serving. Makes 9 large cookies.
