Maple Glazed Apple Oatmeal Cookies

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. Peel, core and dice approx one large apple. Melt the butter in the microwave for 45 seconds. In a large bowl, add in the melted butter, egg, sugar and vanilla.
Whisk this together for about a minute. Add in the flour, baking soda, baking powder, cinnamon, rolled oats, and diced apples. Fold the dry ingredients into the wet batter until just combined. Using a cookie scoop, portion each cookie on the parchment lined baking pans with two scoops of cookie dough per cookie.
Bake these for 10-12 minutes or until the bottom edges are golden brown. Once they're done baking, cool to room temperature for 30 minutes. For the glaze, mix together the powdered sugar, cinnamon, maple syrup, and milk until the consistency is slightly runny and opaque.
Drizzle the glaze on top of the cooled down cookies.
