Preheat the oven to 425°F (220°C). Line a muffin pan with 12 liners. Dice the apples and press lightly with a paper towel to remove excess moisture.
In a large bowl, whisk the sugar, butter, eggs, vanilla, and milk until combined. Add in the flour, baking powder, baking soda, salt, and cinnamon. Mix until just combined.
Divide batter evenly into 12 muffin cups, filling to the top. Bake at 425°F for 5 minutes, then lower to 350°F (175°C) and bake for another 14–16 minutes until golden and a toothpick comes out clean. Let the muffins cool to room temperature.
For the glaze, whisk together the maple syrup, powdered sugar, milk, and salt until well combined. Dip the room temperature muffins lightly in the glaze to coat the top.
