Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Dice the apple and set aside.
Melt the butter in the microwave for 45 seconds. In a large bowl, add in the butter, sugar, egg and vanilla extract and whisk these ingredients together for 3-4 minutes until the batter is light and fluffy.
Add in the flour, baking soda, diced apples, and baking powder. Gently stir this together until the ingredients are just combined. Let the cookie dough chill in the freezer for 30 minutes.
Using a cookie scoop, Portion the dough about 1.5 tablespoons per cookie and placed them on a parchment lined baking sheet. Bake the cookies for 11-13 minutes until the edges are golden brown. Once they’re done baking, let the cookies cool to room temperature.
For the glaze, whisk together the maple syrup, powdered sugar, milk, and salt until well combined. Dip the room temperature cookies lightly in the glaze to coat the top.
