Lemon Blondies

Preheat the oven to 350°F (175°C) and line an 8x8 pan with parchment.
In a bowl, whisk together melted butter and sugar for about 2 minutes. Add egg, lemon juice, zest, and vanilla and whisk for another minute. Stir in flour and salt until smooth.
Spread batter evenly into the pan and bake for 18–22 minutes. Once this is baked, let it cool to room temperature for 30 minutes to an hour.
For glaze, whisk powdered sugar, lemon juice, and lemon zest until smooth. Pour over room temperature blondies. Let this rest for another hour at room temperature to let the glaze solidify.
