Homemade Oatmeal Cream Pie Cookies

Soft molasses oatmeal cookies sandwiched with a whipped vanilla cream filling for the ultimate homemade oatmeal cream pie. An easy scratch cookie recipe.

Instructions

Start by preheating my oven to 375 degrees (F) / 190 (C) and then melting my butter for about 45 seconds in the microwave. Then in a large bowl, Combine the butter with quick oats, brown sugar, molasses, vanilla extract, and the egg. Whisk this together for about a minute.

Then Add in the rest of the dry ingredients: flour, cinnamon, baking soda, and salt. Fold the batter until the cookie dough was well combined. Line my baking sheet with parchment paper and portioned out about 6 ounces for each cookie. This made me 8 cookies in total.

Bake this for 12-16 minutes, or until the cookies were slightly more than golden brown on the bottom. Once they were done, Let them cool for about 20 minutes. While they were cooling down, Make the cream filling by whipping the filling ingredients together in my stand mixer for 3-5 minutes, until the texture could hold stiff peaks.

Then I piped these onto 4 of the cookies, and put another cookie on top of the filling to create the cookie sandwiches.

The sandwiches felt huge, so in hindsight, I would properly portion the cookies by 3 ounces, instead of 6 and flatten them a bit before baking!
