Preheat the oven to 350°F (177°C). Line a 9x9 baking pan with parchment paper.

Sugar Cookie Base:

Melt the butter in the microwave for about 45 seconds. Add the sugar, egg, and vanilla extract to the melted butter and whisk for 2-3 minutes. Add in the salt, baking powder, and flour. Fold the dry ingredients into the cookie batter until the cookie dough is well combined. Spread this evenly and lightly press the dough onto the bottom and sides of the baking pan.

Bake this for 35-40 minutes, or until the top is golden brown. Let this cool to room temperature.

Cheesecake Filling: Bring the cream cheese to room temperature. In a mixing bowl, add in the softened cream cheese, heavy whipping cream, sugar, vanilla and salt. Mix this on medium speed with a hand mixer until everything is well combined with a smooth texture.

Spread this evenly over the cooled down sugar cookie base. Add some extra sprinkles on top of the cheesecake filling and let this set in the fridge for at least 4 hours before serving.
