Dark Chocolate Chunk Banana Nut Muffins

In a large bowl, whisk together the eggs, avocado oil, and vanilla extract.
Mash 1 cup of ripe bananas (about 2 large bananas) and stir into the wet mixture until fully combined.
Add in the flour, brown sugar, baking soda, baking powder, cinnamon, and salt. Stir until a thick batter forms.
Fold in the chopped nuts and dark chocolate.
Line a muffin pan and scoop 6 oz (170g) of batter into each cavity. This recipe makes 12 muffins.
Sprinkle additional chopped nuts and dark chocolate on top of each muffin.
Bake at 425°F (218°C) for 7 minutes, then reduce the temperature to 350°F (177°C) and bake for another 10 minutes. Do not open the oven during the temperature change.
Let cool before serving.
