Cranberry Walnut Shortbread Bars

In a stand mixer, cream together the softened butter, granulated sugar, and brown sugar for 4–5 minutes until light and fluffy.

Add in the vanilla extract, flour, and salt. Mix until a thick dough forms.

Line a loaf pan with parchment paper. Press half of the cookie dough into the bottom of the pan to form an even layer.

Spread the cranberries evenly over the bottom layer. Then, break the remaining dough into chunks and scatter them over the cranberries, pressing slightly to cover.

Sprinkle the chopped walnuts evenly over the top.

Bake at 400°F (205°C) for 17–20 minutes, or until the top is golden brown.

Allow to cool in the pan for 2 hours before slicing into bars.
