Coffee Cake Cookies

Brown butter cookies made with instant coffee powder and a streusel swirl on top for a coffee cake experience. An easy one-bowl cookie recipe ready in.

Ingredients

Instructions

Starting with the cookie dough, Melt my butter in the microwave for 45 seconds and added it into a large bowl. In the same bowl, Add in the instant coffee powder and brown sugar and whisked this together for a minute. Then Add in the egg, vanilla extract, flour, baking soda, and salt and combined this until the cookie dough formed.

Then Make the coffee streusel by adding in the coffee, brown sugar, cinnamon, and flour to a large bowl and whisking until the crumble formed. Portion each cookie by 6 ounces, rounded the cookie dough, and created a crater in the middle of the cookie. Then Add about half a tablespoon of the coffee streusel into the crate of the cookie.

Bake these for 8-10 minutes at 425 F (218C). While they were baking, Add icing by whisking together the powdered sugar, vanilla extract, heavy whipping cream, and cinnamon for about 3-4 minutes. Then Drizzle this on top of the cookie after it was done baking.
