Cinnamon Apple Pistachio Muffins

Preheat the oven to 375°F (190°C). Line a muffin pan with muffin liners. Dice 1 large apple and roughly chop the pistachios.
In a large bowl, whisk together oil, sugar, egg, milk, and vanilla. Add in flour, baking powder, baking soda, salt, and cinnamon. Fold in the dry ingredients until just combined. Gently fold in diced apple and pistachios.
Divide batter evenly into 12 muffin cups. Mix together 1 tablespoon of cinnamon and ¼ cup of brown sugar and sprinkled about a teaspoon of this on top of the muffin batter. Bake for 18–20 minutes until golden and a toothpick comes out clean.
