To start, Melt my butter in the microwave for about 45 seconds. Then, in a large bowl, Whisk together the butter, eggs, pumpkin puree, brown sugar, and vanilla extract for 2-3 minutes. After, Add in the dry ingredients: flour, baking powder, and chocolate chips and mixed them together until the batter was fully combined.
Line an 8x8 baking pan with parchment paper, then Add in the blondie batter. I sprinkled another handful of chocolate chips on top, and baked this at 325 (F) / 163 (C) for 20-25 minutes.
