Chocolate Chip Banana Bread Cookies

In a stand mixer, cream together the brown sugar, granulated sugar, butter, and egg until well combined. Mix in the mashed banana and vanilla extract.
Add in the flour, cornstarch, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix until a dough forms, then fold in the chocolate chips.
On a parchment-lined baking sheet, use a 3 oz cookie scoop to portion out 8 cookies. Flatten the portions slightly, as this dough doesn’t spread much while baking.
Chill the cookie dough in the freezer for 40 minutes. Then bake at 350°F (175°C) for 15–18 minutes until lightly golden and set.
