Blueberry White Chocolate Cookies

Soft brown butter cookies with frozen blueberries and white chocolate chips melted into the chewy dough. An easy one-bowl blueberry cookie recipe — use.

In a saucepan over medium heat, combine the butter and frozen blueberries. Let the mixture simmer for 4–7 minutes until the blueberries have broken down. Stir frequently.

Remove from heat and let the blueberry-butter mixture cool for 15–20 minutes.

In a mixing bowl, whisk together the flour, baking soda, and salt.

Add the cooled blueberry-butter mixture and sugar into the dry ingredients and mix until a dough forms. Then fold in the white chocolate chips.

On a parchment-lined baking tray, portion the dough into 4 large (6 oz) or 8 standard-sized cookies using a cookie scoop.

Garnish each cookie with a few white chocolate chips and a frozen blueberry on top.

Bake at 400°F (205°C) for 12–15 minutes, or until the edges are golden brown.

Let the cookies cool on the tray for 10 minutes before transferring to a wire rack.
