Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mash the banana and add in the melted butter, sugars, egg yolk, and vanilla. Whisk this together for about a minute. Add in the flour, oats, baking soda, salt, chocolate chips, and cinnamon. Fold in the dry ingredients until just combined.
Let the dough chill in the freezer for 30 minutes. Then, scoop the dough into 2-tablespoon sized portions and place 2 inches apart on the baking sheet. Bake for 10–12 minutes, or until edges are golden and centers are soft but set. Cool on the pan for 5 minutes, then transfer to a rack to fully cool down.
