In a small saucepan, melt the butter over medium-low heat. Let the butter continue to lightly simmer until it’s a deep golden brown. Let this cool to room temperature before using it for the batter.

In a bowl, add in the browned butter, brown sugar, banana, egg yolk, and vanilla. Whisk until smooth and combined. Add in the flour, oats, baking soda, cinnamon, and salt. Fold gently until just combined.

Chill dough in the fridge for at least one hour, this is key to prevent a ton of spreading and also bake in a chewy texture.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Scoop dough into 2-tablespoon portions, making 12 cookies. Place on the baking sheet spaced at least 2 inches apart. Bake for 12-15 minutes until edges are golden and centers look slightly underbaked.

Let cookies cool on the pan for 10 minutes. They’ll set to be chewy and fudgy as they rest
