Preheat the oven to 350°F (177°C). Line a 9x9 baking pan with parchment paper. For the shortbread base, melt the butter in the microwave for about 45 seconds. In a bowl, combine the melted butter, sugar, vanilla, flour and salt. Stir together until the shortbread dough is well combined.
Spread this evenly and lightly press the dough onto the bottom of the baking pan. For the apple filling, core and dice about medium sized apples. In a bowl, add the diced apples, sugar, vanilla, salt, and cornstarch.
Lightly stir this together until well combined. Layer the apple filling on top of the shortbread dough in the baking pan. For the crumble topping, melt the butter in the microwave for about 45 seconds. Add the flour and sugar to the butter and mix together until you have a crumbly texture.
Add the crumble on top of the apple filling.
Bake this for 40-45 minutes, or until the top is golden brown.
