S'mores Cookies

Melt the butter and let it cool slightly. In a large mixing bowl, combine the melted butter, brown sugar, egg, and vanilla extract. Whisk for 3–4 minutes until the mixture is smooth and the sugar has mostly dissolved. Add in the flour, baking soda, and salt. Mix until a dough forms.
4. Fold in the dark chocolate chips. On a parchment-lined baking pan, arrange 9 graham cracker squares evenly spaced. Top each graham cracker with a square of chocolate bar.
Cluster 6–7 mini marshmallows on top of each chocolate square. Scoop 6 oz (170g) of cookie dough and gently place it over each graham cracker stack. Press the dough slightly around the edges to secure the toppings inside the cookie as it bakes.
Bake at 425°F (218°C) for 10–12 minutes or until the tops are golden brown.
Let cool slightly before serving. Makes 9 large cookies.
