Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

In a large bowl, whisk together the melted butter and granulated sugar for about 2 minutes. Add the egg, lemon zest, lemon juice, and vanilla extract and whisk until smooth and fully combined.

Add the flour and salt directly to the bowl and stir until no dry streaks remain. Do not overmix.

Transfer about ¼ of the batter to a small bowl and stir in the matcha powder until fully combined.

Spread the plain lemon batter evenly into the prepared pan. Drop the matcha batter over the top in small spoonfuls. Use a knife or skewer to gently swirl the matcha batter into the lemon batter, being careful not to overmix.

Bake for 18–22 minutes, or until the edges are lightly golden and the center is set with a slight jiggle remaining.

Allow the blondies to cool completely in the pan for about 1 hour. Once cooled, lift them out using the parchment paper, slice, and serve.
